Ingredients
To make juicy and tender miso meat, you will need:
- 1 kg of lean pork (shoulder or loin);
- 2 tbsp of miso paste;
- 2 tbsp of soy sauce (classic soy sauce is recommended);
- 1 tbsp of sesame oil;
- 1 tsp of sesame seeds;
Step-by-step preparation
Wash the meat thoroughly, then pat it dry with a clean napkin or kitchen towel. Next, rub it with miso paste, wrap it in cling film, or place it in a container, and leave it in the main compartment of the refrigerator for 1–2 days. The longer the pork marinates, the more tender it becomes.
After marinating, pour soy sauce over the meat, place it in a frying pan, and fry it in sesame oil for 10–15 minutes on each side. The goal is to create an appetizing golden-brown crust. Then sprinkle the pork with sesame seeds, wrap it in foil, and bake for about 30 minutes at 180°C.
Miso meat is traditionally served with daikon radish salad and nori leaves, or with cucumbers marinated in a vinegar-sugar marinade.
Notes:
