Ingredients for finnish-style vinaigrette

For prepare it you need:

  • 2 medium potatoes;
  • 100 g cauliflower (2–3 florets);
  • 2 medium carrots;
  • 1 bunch of arugula (optional);
  • 1 small beet (about 150–200 g);
  • ½ tsp salt;
  • A pinch of ground black pepper;
  • ½ tbsp raw hemp oil (for dressing);

Step-by-step preparation

Boil the cauliflower in lightly salted water for 2 minutes. Remove, cool, and chop into bite-sized pieces.

Cook the potatoes until tender (10–15 minutes), then peel and dice or slice. Boil the carrots for 2–3 minutes, peel, and cut into thin sticks. Boil the beetroot (about 20 minutes), peel, and slice or dice it — not too finely.

Assemble the salad: place arugula in a large bowl, add all the prepared vegetables, season with salt and pepper, and drizzle with raw hemp oil. Mix gently and serve immediately.
