Yogurt is a popular and highly nutritious product enjoyed by both adults and children. It has a centuries-old history and is believed to have originated with ancient Thracian nomadic tribes, who noticed that fermented milk lasted longer and developed a delicate, distinctive flavor.

For people with lactose intolerance and/or milk protein sensitivity, coconut yogurt based on the recipe by Chef Sergey Leonov — bronze medalist of the 2010 Culinary World Cup and honorary member of the Spanish Chefs Guild — is an excellent choice.

Coconut yogurt recipe in a dehydrator

To prepare delicious, creamy coconut yogurt using Leonov’s recipe, you will need the following ingredients:

  • 0.4 L coconut milk (almond milk can also be used);
  • 2 g agar-agar (for thickening);
  • 1/3 packet lactose-free yogurt starter culture (for 3 L);
  • 1 tsp honey or powdered sugar;

First, dissolve the agar-agar in 200 g of warm water and let it swell for 20–25 minutes. Then combine it with the plant-based milk. Pour the mixture into a saucepan or non-stick pot and bring it to a gentle boil over low heat while stirring constantly. Add powdered sugar or honey and mix again thoroughly.

Allow the mixture to cool to approximately 35–36°C (95–97°F), add the yogurt starter culture, pour into jars or bottles, and place them into the drying cabinet (dehydrator). Set the temperature to 40°C (104°F) and the drying time to 5–5.5 hours.

The finished yogurt will have a fairly dense, jelly-like consistency. For a smoother and creamier texture, blend it with a hand blender.

If you slightly modify Chef Leonov’s recipe by adding shredded coconut, the yogurt becomes even more unique, delicious, and nutritious.
