There are foods that can turn even the simplest dishes into sophisticated delicacies. One of them is ghee butter, known for its smooth taste, subtle creamy aroma, and immense health benefits. Its popularity has grown significantly in recent years because, unlike regular butter, it does not increase levels of «bad» cholesterol or contribute to weight gain.

What Is ghee butter and why it’s good for you

Ghee (clarified butter) is a key ingredient in many Indian cuisine recipes. The term «ghee» comes from Sanskrit and literally means «melted fat». This product is made from melted and thickened butter that contains no lactose (milk sugar) or casein (milk protein). It has a dense golden-yellow texture with a delicate nutty-caramel flavor, and its aroma carries light hints of vanilla and oriental spices.

Strictly speaking, ghee should not be referred to as simply «clarified butter», since it is prepared using a long, slow simmering process at low temperature. This allows the removal of water and impurities without damaging the product. Making ghee is a delicate culinary process, unlike just melting butter, which only liquefies it.

Nutritional value and health benefits of ghee

Ghee is highly caloric and nutritious – 100 grams contain up to 900 kcal. Its health value is based on its physical and chemical composition. Ghee contains:

  • Fat-soluble vitamins (mostly A, E, D, and K) – essential for metabolic processes and for supporting proper immune and visual function;
  • Butyric acid – a major energy source for the cells of the small and large intestines and for maintaining digestive health;
  • Conjugated linoleic acid (CLA) – helps regulate lipid metabolism, therefore supporting healthy weight management;

Thanks to its high smoke point (250°C / 482°F), ghee is ideal for sautéing, frying, roasting, and other heat-based cooking methods.

The only notable disadvantage is that ghee can trigger allergic reactions, especially in individuals with intolerance to dairy products.

Best plant-based alternatives to ghee butter

Unrefined cold-pressed plant-based oils are excellent substitutes for ghee. They are rich in vitamins, unsaturated fatty acids, and essential micro and macroelements.

For baking (sweet or savory) use olive oil, sunflower oil, corn oil.  Replace ghee in a ratio of ¾ of the required butter amount.

For frying & high-temperature cooking use oils with a high smoke point, such as camelina (false flax) oil, avocado oil and sesame oil, These do not affect the taste or aroma of dishes and are suitable even for sweet recipes like pancakes or cottage cheese fritters.

For spreading or sandwiches use hazelnut oil and pumpkin seed oil. Just drizzle lightly over bread and spread using a spoon. These oils have a rich but mild taste, perfectly complementing baked goods.
