How to make citrus chips
To prepare one batch of orange chips, you will need:
- 2–3 medium-sized oranges (preferably with thin skin);
- 1 teaspoon of sugar (slightly more or less according to taste);
- 1 teaspoon of ground cinnamon;
The fruits should be washed under running water, then rinsed with boiling water and sliced into very thin rounds. This is easiest to do with a mandoline slicer or a special food slicer.
Next, arrange the slices in a single layer on the tray of a drying cabinet and sprinkle them with sugar and cinnamon.
Finally, set the temperature to 68°C and the drying time to 10 hours. The finished chips should be brittle and crispy but not hard. After cooling, transfer them into a glass container or another airtight storage container and keep them away from direct sunlight.
Fruit chips can be stored for up to 12 months if they have been properly dried and have not come into contact with strongly scented and/or moist products.
Using the same method, you can make snacks from grapefruit, lemon, pomelo, and other citrus fruits. Besides cinnamon, they can also be sprinkled with ground ginger and powdered cloves.
For the best results, it is recommended to use a drying cabinet rather than a standard vegetable dehydrator, because a drying cabinet allows precise control of temperature and airflow intensity (convection). Thanks to this, the chips become perfectly dried, crispy, and highly aromatic.
