Among these sought-after items is organic honey — a product often considered more valuable for wellness than its conventional counterpart. This leads to a reasonable question: how does organic honey differ from regular honey, and is it truly healthier?

Key characteristics of organic honey

The term organic honey typically refers to raw, unpasteurized, unfiltered honey — nectar that reaches the consumer in the same state in which it was produced by bees. At least, this is the impression often created by major brands.

In reality, for honey to be genuinely organic, bees must collect pollen exclusively from plants that have never been treated with pesticides, insecticides, herbicides, or other forms of agricultural chemicals. The apiary itself must be located far from busy highways, factories, industrial zones, or large settlements — essentially, any environment that could compromise the purity of the ecosystem.

Most authentic certified organic honey is imported from countries with vast areas of untouched nature, such as New Zealand or Australia.

Almost all so-called «craft» honey found in stores is simply raw honey, meaning it has not undergone heat processing. However, this doesn’t automatically make it eco-friendly or organic. It is not inherently more beneficial than honey purchased at local markets or directly from beekeepers.

Why honey is pasteurized and what this process does

As many know, honey naturally crystallizes with time — a normal process that does not affect its quality or flavor. Yet many consumers prefer liquid, clear honey, which appears freshly extracted.
To maintain this fluid appearance, large manufacturers often pasteurize honey, exposing it to high temperatures. This destroys the honey’s living enzymes and a significant portion of its vitamins. It also increases the level of hydroxymethylfurfural (HMF), a toxic compound that, in high concentrations, can negatively affect the central nervous system, potentially causing muscle pain or convulsions.
The amount of HMF present is one of the most important indicators of honey quality: the lower the HMF, the more natural and wholesome the honey.

How honey extraction methods influence honey quality

Another feature that distinguishes organic honey from conventional honey is the extraction process. For certified organic production, honey must be extracted using devices made exclusively from stainless steel or other inert, food-safe materials.

Honey is a «living» substance that absorbs everything it touches. When it comes into contact with reactive metals, it oxidizes, leading not only to an unpleasant metallic aftertaste but also to reduced nutritional value.

Organic acids present in honey can react with iron, causing its ions to leach into the product. This alters the honey’s structure and may even make it harmful to human health.

Regular consumption of honey extracted with non-inert equipment can contribute to inflammation, reduce antioxidant activity, and accelerate cellular aging.
