Tagua nut

Unlike most nuts, tagua is used not only in cooking (especially in confectionery) but also in everyday life. It is one of the best eco-friendly alternatives to ivory, widely used for making jewelry, domino pieces, chess sets, checkers, and decorative interior items.

These palms are divided into male and female plants. Male palms produce large, aromatic flower clusters, while female palms bear large multi-seed fruit s —sometimes the size of an adult human head.

Inside each fruit are several dozen small oval tagua nuts (about 5×7 cm), covered with a leathery dark-brown shell. Initially, they are soft and contain tartaric acid. The fresh juice resembles coconut milk or melon juice in taste and aroma.

After drying for one to two months, tagua nuts harden so much that they can only be processed with milling machines. Thanks to this density, tagua is highly valued for carving, coloring, and polishing.

Before World War II, tagua nuts were exported in large quantities to East Asia, Europe, and Japan. Interestingly, Japanese artisans traditionally crafted their famous netsuke figurines from tagua.

Health benefits and culinary uses of tagua

The fresh juice of tagua fruits is used in confectionery as a healthy natural substitute for sugar syrup. When slightly thickened, it turns into a jelly-like substance that is mixed with chopped fruit and served as a sweet snack — a traditional delicacy of Indigenous Latin American communities.

Nutritional value of 100 g of tagua nut:

  • Minerals: calcium (158 mg), magnesium (98 mg), phosphorus (163 mg), potassium (441 mg);
  • Fiber: ~30 g;
  • Vitamin E: 25.5 mg;

Small amounts of Vitamin C, B1, B2, and iron.

Unlike other nuts, tagua is very low in plant fats and has minimal calories, making it a great diet-friendly nut.
