The name of this product reflects the traditional method of its production. Several decades ago, oat grains were carefully and thoroughly ground in a mortar for a long time to obtain tolokno. Today, large manufacturers use a complex multi-stage technology:
- The grain is cleaned in a separator or trieur, then washed and soaked in water for 2 hours;
- The raw material is steamed for 1.5 hours in a special kettle with a stirrer at a temperature of about 110°C (230°F);
- The husk is removed from the oat seeds, after which they pass through a centrifugal huller to eliminate the remaining shell;
- The cleaned grains are ground on special roller mills;
- The resulting powder is sifted to remove impurities and then packaged;
Oatmeal flour (Tolokno) is a cream-colored or beige fine flour with a delicate, subtle aroma and a neutral taste. It is gluten-free and swells very quickly in liquids such as water, milk, or broth.
