Vegetable oil is a product found in virtually every kitchen. It is used for frying, baking, stewing, dressing salads and side dishes, as well as a base for sauces, marinades, gravies, and more. In recent years, the range of vegetable oils has significantly expanded. In addition to traditional options such as olive oil, sunflower oil<\/a>, and corn oil, more \u00abexotic\u00bb varieties have appeared on the market, including pumpkin seed oil, poppy seed oil, black cumin oil, chia oil, and others.<\/p>\n\n\n\n

However, most store-bought products are refined and deodorized, which makes them less beneficial for health. Truly valuable oils that are also delicious, aromatic and \u00abalive\u00bb are considered to be cold-pressed oils. They are labeled as \u00abextra virgin\u00bb and belong to the premium product category. Some oils also have the label \u00abhigh oleic\u00bb, which means that the product is especially rich in unsaturated omega-9 fatty acids.<\/p>\n\n\n\n

High-oleic oil is a vegetable oil produced from special (mostly hybrid) seed varieties. Most often, this label refers to high-oleic sunflower oil, which has a superior fatty acid composition compared to conventional vegetable fats and is as close as possible to natural olive oil.<\/p>\n\n\n\n

While the concentration of oleic acid in refined sunflower oil usually does not exceed 70%, high-oleic sunflower oil can contain 80% or even up to 90% oleic acid.<\/p>\n\n\n\n

Omega-9 is not produced by the human body, but it plays an important role in many metabolic processes. It helps reduce the level of \u201cbad\u201d cholesterol in the blood, participates in the formation of cell membranes, and supports the skin\u2019s hydrolipid balance.<\/p>\n\n\n\n

Oil rich in oleic acid has high oxidative stability and is ideal for baking, stewing, and deep frying. It does not smoke easily, does not foam, and heats slowly without losing its properties.<\/p>\n\n\n\n

Besides sunflower oil<\/a>, other high-oleic oils include avocado oil and camellia oil. Recently, a new rapeseed variety has also been developed, making it possible to produce oil rich in omega-9. However, it is not yet widely used on an industrial scale due to its demanding growing conditions.<\/p>\n\n\n\n
